Blini are essential to the celebration of Maslenitsa. Being warm, round, and golden they symbolize the sun and spring. Blini are given to friends and family all through the week and are topped with caviar, mushrooms, jam, sour cream, and of course, lots of butter. Besides they are very tasty and easily cooked!

You may enjoy this dish as well as its preparation as all the Russian families will do the next week. So here is our recipe how to make Russian Blini:

1 1/2 cups of milk
2 eggs
1 cup of flour
2 table spoon of sugar
2 table spoon of vegetable oil

Whisk together eggs and milk in a medium bawl then gradually add flour, oil and sugar.
Heat a flat-bottom frying pan with some vegetable oil, pour a ladle of the dough and spread it evenly. Bake on one side until the dough bubbles, then flip it over and bake the other side. Pile the ready pancakes on a flat plate. And do not forget butter as Maslenitsa is translated as a “butter week” from Russian.
